Tapioca is not only one of the core components in your bubble tea recipe but also the iconic symbol for bubbletea. Many people think bubbletea gets its name due to the bubble like appearance of tapioca pearls at the bottom, however its actually due to the layer of bubble that are created through the shaking of the drink during preparation. Tapioca is the start of what began the craze of the edible drink. Tapioca is made from the starch of the cassava root. Boston Coolers uses only the highest grade starch to ensure consistency in texture and longevity of our pearls.
It is important to note that Tapioca is one of the very few ingredients in bubbletea that requires at least 2 hours of pre preparation. It is purchased in its pre cooked form and requires boiling, steeping, rinsing and storing in sugar syrup. Once prepared and stored, the life span of cooked pearls are for 6-8 hours. This is due to its starch properties. Tapioca should be stored at room temperature and never in the fridge as it will begin to dry and harden. As it is a starch, it slowly absorbs any liquid it Is stored in and changes in consistency from chewy to mushy. The quality of your tapioca can lead to very loyal customers or losing all your customers. Recipe: Cook for 30 minutes in boiling water, steep for 15 minutes, rinse throughly and store in sugar syrup (500 gms of tapioca:100ml of sugar syrup)
